by request, the recipe from this mornings breakfastpreparation: 10 minutes cooking time: 30 minutes
serves: makes 12 muffins
Ingredients:
1 cup wholemeal organic self raising flour
1 cup butternut pumpkin (cooked and mashed)
half small red capsicum finely diced
1 cup spinach leaves, finely chopped
3 spring onions, chopped,
2 whole eggs
1 cup low fat milk
freshly ground pepper (to taste)
canola oil spray
Preheat oven at 180oC. Combine all dry ingredients - flour, pumpkin, capsicum, spinach and onion in a mixing bowl. Whisk together eggs, milk and pepper and add to the mixture.
Spray 12 hole non stick muffin tin slightly with oil, Spoon in mixture. Bake for 25/30 minutes or until golden and cooked through. Turn muffins out and allow to cook on a wire rack.
Easy eh :) oh yes they were yuummy! just so you know and can adapt if you wish, i used half the flour and added a bit more pumkin. well. Storm did. And you could add two tablespoons of cheese if you wanted (we didnt) And she roasted the pumpkin to mash. She said that retains the flavour better
Serve with spinach leaves and fetta cheese. oh YUM! Enjoy!
